Now the Fun Begins! June 24, 2012

When we got home the first thing Mark did was get comfortable...then he started preparing the salmons.
Unlike our Skipper in La Push, our guide on the Sol Duc does not fillet your salmon for you.  But no worries...I am married to a pro!  Mark had my little Sockeye done in the blink of an eye!  Look how bright and beautiful the meat is!  It is such a beautiful coral color.  Thank you little Sockeye!

Now this "little lady" is BIG Bertha!!  She was full of eggs!  Guess she should have been called a "Queen" salmon and not a "King"!


The meat is much lighter in color compared to the Sockeye, but she will smoke up quite nicely!

I didn't get any shots of us vacuum sealing...boaring...but it was a lot of work!!  We got to bed around 1:30 AM!  ZzzzZzzzZzzz  I think it's time for a bigger freezer!!!
